Chilled monkey brains

Ingredients

4tbsp handfuls strawberries, hulled
2tbsp cooked rhubarb
1tbsp caster sugar
1tsp gelatine powder
1tbsp marscapone
1tsp icing sugar

In this video I am attempting to replicate the famous chilled monkey brains as seen in the movie Indiana Jones and the temple of doom, one of my most favourite movies. The scene in question involves several characters being served up a rather unpleasant feast and the monkey brains just topped it off!

Start off by whizzing together the hulled strawberries and rhubarb in a blender and add a little sugar to take out any sharpness. Try to leave it a little chunky for more authentic brain lumps and chunks! Pass the mixture through a sieve to take some of the moisture out.

Follow up by adding in the gelatine powder to help it firm up, marscapone for a slight creamy texture and some icing sugar. Mix through and chill to firm.

Now simply serve in your chilled monkey brain bowl or obviously a normal dish if you prefer!! Would go great with some vanilla ice cream and fresh mint…. enjoy!
