How to make a healthy baked one tray version of a full english breakfast. This is extremely easy to do and gets assembled in just one tray, 30 mins and its in your tummy!

This is part of British recipe Month, other recipes to date include shepherds pie, bakewell tart, toad in the hole & scones.

This version is baked and uses one tray so it is saving on the washing up and considerably more healthy. I personally hate the taste of a fry up so on the odd occassion when I treat myself baked is the way to go!

Pre-heat your oven to gas mark 5 or equivalent see conversion cooking chart and place your sausages on a large tray. Give them a light brushing of olive oil and bake them for ten minutes.

Remove the tray from the oven add the bacon and rotate the sausages and bake for a further 5 minutes.

After that flip over the bacon, rotate the sausages again and add the mushrooms, bake for 5 more minutes. The last bake you can add the remaining ingredients – baked beans in ramekin dishes, halved tomatoes with some oil and pepper on top, strips of black pudding and crack eggs in one corner. Bake fully for ten minutes or until the egg is cooked through.

Serve immediately with red and brown sauce! Keep warm in the oven on the bottom shelf wrapped in foil if not serving immediately, but best eaten fresh
