Greek Yoghurt Pancakes

Ingredients

2 eggs, whites only
2tsp bicarb of soda
12oz low fat greek yoghurt
130g plain flour (1 cup)
serve with blueberries, bananas and a honey

These amazing 4 ingredients pancakes are a little healthier for you as they are made with both greek yoghurt and the yolk has been removed from the egg, leaving just the egg whites. Coupled with some plain flour to thicken and bicarbonate soda to give a bit of rise, you’ll love them!

Start off by mixing the wet ingredients together, so if you have not done so already crack your eggs and separate the yolks. You can keep them in the recipe if you wish.
Mix the egg white together with the yoghurt, it may look a litle lumpy at first but that is fine, they will go in a moment, just get it well mixed together.

Add the bicarbonate of soda and plain flour into the bowl and mix well, make sure you get all the lumps out of the batter, you want it to be smooth in the pan. Your pancake batter is now made, how cool is that! Super easy pancakes coming right up…..

Get your trusty frying pan over a medium flame, rub a little oil on the pan or spray whatever you are using, then add even dollops of the mixture to the pan. Cook for roughly 1 minute before flipping and repeating for around 30 seconds to brown the other side, rest on kitchen towel and repeat!

Stack the pancakes high and serve up with some fresh blueberries, banana slices and a good drizzle of honey!

I’m not sure if these are the best pancakes ever, but they are absolutely gorgeous, light and fluffy and i’ll eat any if you don’t fancy them!
