One tray sticky chicken

Ingredients

8 chicken thighs (breasts works too)
2tbsp honey
4tbsp duck sauce (not the song)
2tbsp olive oil
2 tsp chinese five spice
1 garlic clove, chopped
1tsp fresh ginger, grated
veg of your choice, I went for: broccoli
frozen peppers (cheap to buy/reusable!)
3 spring onions sliced, beansprouts

It’s my second recipe for student budget month (the first being this awesome fish pie recipe) this is a one tray sticky chicken thigh recipe dish that is perfect, it’s cheap and easy, filling and most importantly mind blowingly delicious!!

Start off by making incisions in the chicken thighs and plonking them in your roasting tray. The incisions will keep more flavour in and drive it into the chicken.

Meanwhile make the marinade with the ingredients listed below combining in a bowl and mixing well. Drizzle this over the chicken thighs.
Bake for 30-35 minutes at 180c or equivalent, basting every ten minutes or so.

Remove from the oven and stick in your vegetables, bake for a further 15 minutes or until all veg softened and chicken sticky. That is it!

Serve with some rice and the pan juice and veg served alongside those gorgeous sticky chicken thighs!
